Here's a taco dip that won't actually require running for the border (as in burning off calories). This is a great recipe for groups who are looking for options for low-calorie snacks and meals.
Good-For-You Taco Dip
1 pound ground turkey
1 tbsp taco seasonings
1 can pinto beans
1 cup nonfat sour cream
2 cups shredded lettuce
1 large tomato - chopped
1green pepper - chopped
1 bunch green onions - chopped
1 jalapeno - minced
1 small bunch cilantro - chopped
1 cup good salsa (I like roasted corn and chipotle salsa!)
1 cup shredded reduced fat cheddar cheese
1 small can sliced black olives – optional
1 bag baked tortilla chips
Brown the turkey in a nonstick skillet. Add the taco seasonings and the liquid from the can of beans. Cook until the turkey is coated and moist.
Layer the beans in a round glass dish.
Put the seasoned turkey next.
Mash the avocados with juice from the lime. Season with salt and pepper. Dollop this on the turkey.
Spread with the sour cream.
Sprinkle on the lettuce.
Mix the peppers, tomato, onion and cilantro together with the salsa. Add this to the layers.
Top with the shredded cheese and garnish with the black olives.
Serve with baked tortilla chips.
