FIT trainer whips up healthy pizza recipe

Pineapple, cilantro, veggie pizza
 
Pizza Crust
1/2 tablespoon salt
12/3 cups organic barley flour
1 cup organic millet flour
1/3 cup ground flax seeds
11/2 tablespoons active dry yeast
1 cup water
2 tablespoons olive oil
 
Combine all ingredients into a bread machine pan. Select
machine setting to “dough.” Press start. Make sure the dough
gets mixed well.
 
Other Ingredients
2/3 cup fresh pineapple (do not use canned) diced into small
pieces
2/3 cup diced onion
2/3 cup green peppers
1/3 cup fresh cilantro chopped into small bits
1/2 jar of peach salsa
1 bag of fat-free shredded mozzarella cheese
 
Preheat oven to 350. Spray a pizza pan with olive oil. Lightly
press finished dough into the pan. Crust should be no thicker
than one-fourth of an inch. Purée salsa in a blender until
smooth. Pour purée on the dough and evenly spread all the way
