New way to spice up your green beans

If you’re like me, I can’t wait for warmer temperatures and the farmers' markets to start opening up for the summer to get great local produce.

This is a different recipe for green beans. I think once you try it, it will become a normal way to prepare them.

You can also use this recipe on broccoli and cauliflower and adjust the cooking time a little bit. 

Parmesan Roasted Green Beans

Yield: 4 servings, about 1 cup each

8 cups cleaned and trimmed green beans
2 tablespoons extra-virgin olive oil
2 tablespoons minced garlic
1/4 teaspoon salt
freshly ground pepper to taste
1/2 cup finely shredded Parmesan cheese


Preheat oven to 450°F. Toss green beans, oil, garlic, salt and pepper in a large bowl. Spread on a large rimmed baking sheet and roast until starting to soften and brown on the bottom, 10 to 15 minutes. Toss the green beans with cheese. Return to the oven and roast until the cheese is melted and any moisture has evaporated, 5 to 10 minutes more.
