Bourbon Glazed Salmon
3 tablespoons brown sugar
3 tablespoons bourbon
2 tablespoons low-sodium soy sauce
1 tablespoon grated ginger
1 tablespoon lime juice
4 (6-ounces) skinless salmon Filets
Combine the first seven ingredients in a large zip top bag. Add fish to the bag and marinate for two hours, turn after one hour.
Heat large nonstick pan over medium heat and coat with cooking spray. Add fish and marinade to the pan and cook for four minutes on the first side, then flip.
Cook fish until it flakes easily with a fork. Plate fish and drizzle with sauce from pan.
