Dress like it is winter, eat like it is summer

It is so cold outside, but here's a recipe that will make you feel like it is summer bbq time.
 
Vegan Potato Salad
Approximately 8 servings
 
You will need:

4 medium sized potatoes

2 stalks of celery, chopped

1/2 onion, chopped

1 cup vegan mayo (I used Follow Your Heart Reduced Fat Vegenaise)

2 teaspoons mustard

2 teaspoons white vinegar

1/2 teaspoon dill

salt and pepper to taste

Peel (if you prefer, I don't) and cube potatoes and boil till fork tender, approximately 20 minutes. Drain potatoes and allow to cool. Meanwhile, in a large bowl add remaining ingredients and mix well. When potatoes have cooled add to bowl and toss well to coat. Refrigerate for at least four to six hours before serving, overnight is best. Serve cold.
