My grandmother passed a few years ago and she was an amazing cook.
One of her dishes I loved and crave from time to time is her goulash.
It's a simple yet comforting meal and reminds me of her.
I was excited to recreate it as a vegan after I found a decent ground beef substitute.
My version of the recipe makes enough to feed my family of three when paired with a salad. It may need to be doubled if you need more than three servings.
You will need:
1 28-ounce can organic crushed tomatoes (I prefer Muir Glen Fire Roasted)
1 onion, chopped
1 12-ounce package Lightlife Smart Ground Original Veggie Protein Crumbles
Half box of 16-ounce pasta (Traditionally elbow, but use whatever you have on hand or prefer)
Salt and pepper to taste
Boil pasta to your liking. For goulash, I prefer my noodles over done. I cook them for double the recommended time on the package.
While your pasta is boiling, lightly spray skillet with oil and saute onions over medium heat till soft and translucent.
Break up the meat crumbles with your hands and add to skillet. Cook approximately five minutes.
Once pasta is done, drain and return to pot.
Add meat, onions, tomatoes and salt & pepper.
Cover and allow to simmer for an additional five-10 minutes till heated through. Enjoy!
